Broccoli Pesto

It’s that time of year again.  When it’s dark a lot.  Which means unless I go to great effort my food pictures look terrible.  So I present a bit of summer in the winter.  I made this in the bright heat of summer but it’s a great winter meal.  A summery pasta dish made with easy winter vegetables.

I toasted pine nuts and some black pepper and blended them with a bunch of garlic, olive oil, lemon juice, and parmesan.  I never measure stuff for this – I just keep adding and blending and tasting.  In the meanwhile I briefly boiled a whole bunch of broccoli in salty water.  The salty water is key.

 

Then added the broccoli to the blender and voila!  Enough Broccoli pesto to feed a crowd or enough to put some in the freezer, or what we do – which is just eat it for a week.

 

I roasted a cauliflower and cocktail wieners (because they are easy) in the oven with just a bit of oil.  I’m guessing at 400º for… until things had brown edges and the cauliflower was cooked.  I boiled a 1lb box of pasta (also in salty water).

 

Mixed everything together and that’s what we ate for a week. img_2727

It’s an easy tasty fall back meal.  Which I hope you can fall back on and I have fallen back on for a blog post 😉
